Saturday Dinner

I found this lovely recipe on Pinterest while looking for high-protein, low-calorie recipes. I made it exactly as described, except I omitted the cheese (trying to cut out the dairy.)

It was very yummy, but when I make it again, I think I'll make a few changes. First, I'll use green bell peppers. I just like the flavor better in green ones. Second, I'll pre-boil the peppers. After about 35+ minutes of baking, they were still too crisp for my taste. Third, I'll add some red onion. I think it just needs that little extra and then it'll be perfect.

I was able to make this meal last throughout Sunday and Monday as well. It reaheated lovely. I actually think I like them reheated better. The peppers really softened up afterward. Love leftovers!

All in all, very yummy!
